Ridge gourds are very low in calories, that belongs to the cucumber family. It contains various antioxidants, minerals, vitamins, nutrients and lipids. It is an excellent source of Vitamin A and carbohydrates. Ridge gourd nutrition value makes it appropriate for weight loss plans. It is known by many names including ridge gourd, ridged gourd, silk or silky gourd, sponge gourd, Chinese okra, angled luffa and vegetable gourd among others. In Bengali, it is better named as jhinge. Jhinge posto, jhinge bharta, pur bhora jhinge'r bora is very famous among Bangalis. Here I have shared the recipe for Pur Bhora Jhinge Fry or Stuffed Ridge Gourd Fry.
Ingredients
- Ridge gourd, peeled & washed (Jhinge in Bengali) - 2 small size
- Coconut, grated - 1/2 cup
- Poppy seeds paste - 4 to 5 tsp
- Cashew nuts, crushed - 10 to 12
- Raisins, in small pieces - 10 to 12
- Onion, finely chopped - 1 medium size
- Green chillies, chopped - 1 tsp
- Besan - 2 tsp
- All purpose flour - 2 tsp
- Baking soda - a pinch
- Turmeric powder - a pinch
- Poppy seeds - 1/4 tsp
- Salt - to taste
- Sugar - to taste
- Oil - for deep fry
Method
Take the ridge gourds and partially slit them. Take out the inner pulp of the ridge gourd and make a pocket inside this.
Now in a pan, heat oil. Add the pulp and coconut, fry till light brown. Add the chopped onion. Fry for a min. Don't overcook. Add poppy seeds paste, cashew nuts, raisins, green chillies and some salt & sugar. Give it a nice stir. Switch off the flame.
Take the ridge gourds and sprinkle some salt. Now take the premade stuffing into the pockets of ridge gourds.
To make the batter, in a mixing bowl, take the besan, all purpose flour, a pinch of soda, turmeric powder, poppy seeds, salt and sugar. Add some water and make a thick smooth batter. Make sure that the batter should be lumps free.
Heat oil for deep fry. Take a stuffed ridge gourd, put it into the batter and place it in the hot oil. Fry the both sides and take it out onto the kitchen towel. Serve hot along with steamed rice, dal and a piece of gondhoraj lemon.
