Today's recipe is very simple but delicious - Phulkopir Dalna (Cauliflower and potato curry). This is a common bengali recipe with a little ingredients. A pure veg recipe - without onion-garlic, can serve at puja also. Cauliflower is basically a vegetable of winter, but nowadays, it can be easily available in the market throughout the year. There are so many tasty recipes of couliflower, but this one is one of my favourite. Let's check out the ingredients -
Ingredients
- Cauliflower - 2 small size, cut into pcs
- Potatoes, cubed - 1 large size
- Green chilli - 4
- Tomato, chopped - 1 large size
- Five spice - 1/3 tsp
- Bay leaf - 2
- Turmeric powder - 1 tsp
- Cumin paste - 1 tsp
- Coriander paste - 1/2 tsp
- Ginger paste - 1/2 tsp
- Garam masala powder - 1/2 tsp
- Ghee - 1 tsp
- Salt - to taste
- Sugar - to taste
- Mustard oil - as required
Method
Soak the cauliflower in hot water for 10 mins.
Heat oil in a pan. Add the cauliflower pcs and sprinkle some turmeric powder. Fry till the color changes. Take these out and keep aside.
In the remaining oil, add five spice and bay leaf. It starts to crackle within a few sec. Add the potatoes. Sprinkle some turmeric powder and salt. Fry till light brown. Make a space in the middle. Add the ginger paste and fry for a min. Add the chopped tomatoes. Fry it for another 30 sec. Now add turmeric powder, salt, sugar, cumin- coriander paste and a little water. Cook for a min. Add the fried cauliflowers. Cook till oil comes out. Add the ghee and garam masala powder. Add some more water (hot). Cover the lid and cook it till the the vegetables are nice and cooked. Once the gravy thickened to your desired consistency, switch off the flame. Serve hot with rice or roti.
