MUTTON ROGAN JOSH



Ingredients
  • Mutton, on bone – 750 gms
  • Bedgi red chillies – 2
  • Black cardamom – 3
  • Green cardamom – 4
  • Cinnamon stick – 1inch, 2
  • Cumin seeds – ¼ tsp
  • Mace - 2
  • Fennel powder – 1 tsp
  • Ginger powder – 1 tsp
  • Asafoetida – ½ tsp
  • Turmeric powder – ¼ tsp
  • Kashmiri red chilli powder – 2 tsp
  • Saffron – pinch
  • Salt – to taste
  • Oil – as required
  • Ghee – 2 tsp

Method

Take a pan. Roast cinnamon sticks, green cardamom, mace, cumin seeds (dry) and put it in a blender and make a fine powder. Now in a bowl, add Kashmiri red chili powder, ginger powder, fennel seed powder, turmeric powder, luke warm water and make a paste.

Heat oil & ghee in a kadai/pan. Add asafoetida, black cardamom, bedgi red chillies. It gives a nice aromatic smell. Now add the mutton pieces and fry it in a low flame until the color of the mutton turns into light brown. Now add the mixture of earlier paste and mix it well. Cook it with covered lid for 20mins. Add the spice powder, salt and some warm water. Mix this well and cook it in low flame with covered lid till the meat becomes soft. Add a pinch of saffron to it. And let it cook for another 10 mins. Now mutton rogan josh is ready to serve. Enjoy it with naan or basmati rice.
