Ingredients
- Bitter gourd (Uchche) – 1
- Raw Banana (KanchaKola) – 1
- Potato – 1
- Sweet potato - 1 medium sized
- Drumstick - 3
- Pointed Gourd (Potol) – 3
- Green papaya - 150 grams
- Radish – 1
- Tomato – 1
- Green chillies - 2
- Mustard seeds – 1 tsp (soaked in water)
- Poppy seeds – 2 tsp (soaked in water)
- Ginger paste – 1 tsp
- Bay leaves (Tejpata) – 2
- Wild celery (Radhuni) – ½ tsp
- Fenugreek seeds – ¼ tsp
- Milk – 1/3 cup
- Mustard oil - as required
- Salt - to taste
- Ghee – ½ tsp
**Vadi
, fried (dried nuggets made of ground lentil) – 5 to 6 (optional)
** You can take any other vegetables of your choice
Method
Cut all the
vegetables in equal size (1 ½ inches long). Take a blender, add poppy seeds,
mustard seeds, green chillies, tomato and make a fine paste.
Heat oil in
a pan/kadai. Fry all the vegetables till half cooked (together or one by one,
as per your choice) and keep it aside. Now in the remaining oil, add bay
leaves, wild celery and fenugreek seeds. When it crackle, add the ginger paste
and fry for 2mins. Add the earlier paste and again fry it for 2mins. Now add
the fried vegetables and salt to it. Add some warm water and cook it in a low
flame with covered lid for 10mins. Now add the milk and ghee, cook again for
5mins in low flame. Serve it with steamed rice.
