Ingredients
- Baingan (eggplant) – 2 large size
- Onion, chopped – 1 large size
- Garlic, chopped – 1 tsp
- Green chillies, chopped – 2 tsp
- Tomatoes, chopped – 1 tsp
- Pepper powder – ½ tsp
- Turmeric powder – ½ tsp
- Coriander powder – 1 tsp
- Garam masala powder – 1 tsp
- Scrambled egg – 2**
- Coriander leaves, chopped – 2 tsp
- Salt – to taste
- Oil – as required
- Chaat masala powder – 1 tsp
** If you want veg, then omit the scrambled egg.
Method
Brush oil onto the eggplant/baingan. Put the baingan on flame of fire and roast it till the skin turns black. Take it out and remove the skin. Now mash the baingan/eggplants and keep aside.
Heat oil a pan/ kadai. Add chopped garlic and onion. Fry till light brown. Add tomatoes to it. Fry it for another 5 mins. Now add turmeric powder, salt, pepper powder, garam masala powder, coriander powder, green chillies and coriander leaves. Cook it in medium flame for 5 mins. Add the scrambled egg. Add the mashed baingan/eggplant and stir well. Cook it in low flame for another 5 mins. Garnish with chaat masala powder. Serve hot with tawa roti.
