Ingredients
- Bhindi (lady finger) – 250 gms
- Chickpea flour – 2 tsp
- All purpose flour – 1 tsp
- Cornflour – 1 tsp
- Rice flour – 1 tsp
- Baking soda – a pinch
- Turmeric powder – ½ tsp
- Black peppercorn, crushed – 1 tsp
- Red chilli powder – ½ tsp
- Lemon juice – 1 tsp
- Salt – to taste
- Sugar – 1/3 tsp
- Chat masala – 1 tsp
- Mustard oil – as required
Method
Wash and dry the bhindi. Slit them lengthwise in 2 pieces with a knife. Take the bhindi pieces in a bowl. Add all types of flour (mentioned in ingredients), a pinch of baking soda, turmeric powder, crushed peppercorn, red chilli powder, sugar, salt, lemon juice and 1 tsp mustard oil. Marinate them well and keep aside for 10mins.
Heat oil in a pan/kadai. Fry the bhindi pieces in a medium flame. Deep fry till it becomes crispy. Garnish this kurkure bhindi with some chat masala. Serve hot with steamed rice/roti.
