Ingredients
- Potato – 1
- Sweet potato - 1 medium sized
- Pointed Gourd (Potol) – 3
- Green papaya - 150 gms
- Radish – 1
- Cabbage, chopped – 1 cup
- Beans, chopped – 1 cup
- Pumpkin, cut into pieces – 1 cup
- Tomato, chopped – 1 large size
- Green chillies – 4 to 5
- Bay leaf - 2
- Panch foron (five spice) – 1/3 tsp
- Ginger paste – 1 tsp
- Turmeric powder – 1 tsp
- Cumin powder – 1 tsp
- Coriander powder – 1tsp
- Kashmiri red chilli powder – 1 tsp
- Garam masala powder – 1tsp
- Dry mango powder – 1 tsp (optional)
- Salt- to taste
- Sugar – to taste (optional)
- Oil – as required
**Vadi , fried (dried nuggets made of ground lentil) – 5 to 6 (optional)
** You can take any other vegetables of your choice
Method
Cut all the vegetables in equal size (1 ½ inches long).
Heat oil in a pan/kadai. Fry all the vegetables till half cooked (together or one by one, as per your choice) and keep it aside. Now in the remaining oil, add bay leaves and panch foron. When it crackle, add the ginger paste and fry for 2mins. Add turmeric powder, green chillies, cumin powder, coriander powder, Kashmiri red chilli powder, sugar, salt and garam masala powder to it. Add some warm water and let it cook for 5 mins. Add all the fried vegetable and cook it till the vegetables are nicely soft. Be careful, the vegetables should not be smashed. Now add the dry mango powder. Serve it with roti/ steamed rice.
