Ingredients
- Prawn – 15 to 20, medium size
- Rice, soaked in water – 1 and ½ cup
- Dry red chilli - 2
- Cinnamon stick – 2, 1 inch long
- Green cardamom – 3 to 4
- Cloves – 2 to 3
- Bay leaves – 2
- Mace powder – ½ tsp
- Garam masala powder – 1 tsp
- Onion, chopped – 1 large size
- Ginger paste – ½ tsp
- Turmeric powder – 1 tsp
- Lemon juice – 1 tsp
- Coconut milk – ½ cup
- Cashew nut – 10 to 12
- Raisins – 10 to 12
- Ghee – 3 tsp
- Oil – as required
- Salt – to taste
- Sugar – to taste
- Rose water – 2 tsp
- Saffron, soaked in coconut milk – a pinch
Method
Take the prawns in a bowl. Marinate the prawn with turmeric powder and salt.
Heat oil and ghee in a pan/ kadai. Add bay leaves, dry red chilli, cardamom, cinnamon stick, cloves. Sauté for a minute. Add chopped onions and fry till golden brown. Add ginger paste and the prawns. Fry for another 5 mins. Add cashew nut and raisins. Add lemon juice, mace powder, garam masala powder, turmeric powder, salt and sugar. Mix it well. Now add the soaked rice and fry for 3 to 4 mins. Stir well. Add 2 cups warm water and the saffron with coconut milk. Cook it with covered lid till rice are completely done. Add 1 tsp of ghee and rose water. Mix well and enjoy with chicken/mutton or any other dish of your choice.
