LEMON RICE



Ingredients
  • Rice, cooked (regular use rice) – 1 cup
  • Curry leaves – 2 to 3
  • Dry red chilli – 1
  • Turmeric powder – ½ tsp
  • Lemon juice – 2 tsp
  • Cashew nut, half crushed – 1 tsp
  • Peanuts, half crushed – 1 tsp
  • Red & yellow bell pepper, chopped – 1 tsp (optional)
  • Pepper powder – ½ tsp
  • Mustard seeds – ½ tsp
  • Salt – to taste
  • Sugar – to taste
  • Oil – 1 tsp

Method

Heat 1 tsp oil in pan. Add mustard seeds, dry red chilli and curry leaves. When it crackles, add red & yellow bell pepper, crushed peanuts, cashew nuts. Fry it for 2 mins. Add turmeric powder, pepper powder, salt, sugar and lemon juice. Now add the cooked rice to it. Mix well and fry it for 2 mins. Serve hot with any side dish you desired.
