NAWABI PULAO



Ingredients
  • Cooked Basmati Rice - 2 cups
  • Bay leaf - 1
  • Green Cardamom - 2 to 3
  • Cinnamon stick, 1 inch long - 1
  • Cloves - 2 to 3
  • Peppercorn - 2 to 3
  • Raisins - as you wish
  • Cashew nuts - as you wish
  • Garam masala powder - 1/2 tsp
  • Saffron milk - 3 tsp
  • Rose water - 1 tsp
  • Meetha ator - 1 to 2 drops (optional)
  • Beresta (fried onion) - 1 tsp
  • Lemon juice - 1 tsp
  • Salt - to taste
  • Sugar - to taste
  • Ghee - as required


Method

Heat ghee in pan/wok. Add bay leaf, cinnamon stick, cloves, peppercorn and green cardamom. Saute till it leaves a nice aroma. Add raisins and cashew nuts. Fry it for a min or two. Add lemon juice. Add the cooked basmati rice, salt, sugar, saffron milk and mix well. Add beresta, garam masala powder, meetha ator and 1 tsp of ghee. Mix carefully. Serve hot with any veg/non-veg curry.


**note : while cooking the rice add 1/2 tsp salt, lemon juice and a few drops of oil. It makes the rice nonsticky and more white.
