Ingredients
- Cooked Basmati Rice - 2 cups
- Bay leaf - 1
- Green Cardamom - 2 to 3
- Cinnamon stick, 1 inch long - 1
- Cloves - 2 to 3
- Peppercorn - 2 to 3
- Raisins - as you wish
- Cashew nuts - as you wish
- Garam masala powder - 1/2 tsp
- Saffron milk - 3 tsp
- Rose water - 1 tsp
- Meetha ator - 1 to 2 drops (optional)
- Beresta (fried onion) - 1 tsp
- Lemon juice - 1 tsp
- Salt - to taste
- Sugar - to taste
- Ghee - as required
Method
Heat ghee in pan/wok. Add bay leaf, cinnamon stick, cloves, peppercorn and green cardamom. Saute till it leaves a nice aroma. Add raisins and cashew nuts. Fry it for a min or two. Add lemon juice. Add the cooked basmati rice, salt, sugar, saffron milk and mix well. Add beresta, garam masala powder, meetha ator and 1 tsp of ghee. Mix carefully. Serve hot with any veg/non-veg curry.
**note : while cooking the rice add 1/2 tsp salt, lemon juice and a few drops of oil. It makes the rice nonsticky and more white.
