- Paneer, cubed - 1 cup
- Cumin seeds - 1/3 tsp
- Red chilli flakes - 1/2 tsp
- Kasuri methi - 1/2 tsp
- Tomatoes, chopped - 2 small size
- Green chillies - 2
- Roasted cumin powder - 1/2 tsp
- Roasted coriander powder - 1/3 tsp
- Garam masala powder - 1/2 tsp
- Turmeric powder - 1/3 tsp
- Dry mango powder - 1/2 tsp
- Mace & nutmeg powder - 1/3 tsp
- Salt - to taste
- Sugar - to taste
- Ghee - as required
Method
In a mixer, take the tomatoes and green chillies. Grind it and make a smooth paste.
Heat 2 tsp ghee in a pan. Add paneer cubes and fry till light brown. Take it out and keep aside.
In the remaining ghee, add cumin seeds and kasuri methi. It leaves a nice aroma. Add tomato paste to it. Add salt and sugar. Cook for 5 to 7 mins. Add roasted cumin & coriander powder, turmeric powder, mace & nutmeg powder, garam masala powder. Stir well. Add some water (warm). Cook it till the masala leaves oil. Add dry mango powder and chilli flakes. Add the fried paneer cubes. Mix well. Sprinkle some water. Cover the lid. Keep the gas in medium low flame for 2 to 3 mins. Now Chatpata paneer is ready to serve.
