CHICKEN XACUTI - AN AUTHENTIC GOAN CURRY


Xacuti or Shagoti as is commonly known in Goa has its origin in Harmal (now Arambol) in Pernem Takula of Goa. Chicken Xacuti is a very famous dish authentic to Konkan coast. It is medium spicy, though it contains a lot of spices. One can enjoy this coconut base gravy simply with steam rice. This Goan style recipe is usually prepared with chicken or lamb. The nice aroma of the spices perfume the surroundings. So, lets play with some spices along with chicken.

Ingredients
  • Chicken, on bone - 750 gm
  • Star anise - 1
  • Cinnamon stick - 1 inch long
  • Green cardamoms - 3 to 4
  • Cloves - 3 to 4
  • Black peppercorns - 3 to 4
  • Turmeric powder - 1/2 tsp
  • Garam masala powder - 1/2 tsp
  • Coriander powder - 1/2 tsp
  • Red chilli powder - 1tsp
  • Tamarind pulp - 2 tsp
  • Thick coconut milk - 1 and 1/2 cup
  • Salt - to taste
  • Oil - as required 

For Powder Masala

  • Cumin seeds - 1 tsp
  • Fennel seeds - 1 tsp
  • Fenugreek seeds - 1/3 tsp
  • Nutmeg powder - 1/4 tsp
  • Ginger powder - 1 tsp

For Paste
  • Onion, finely chopped - 3 large size
  • Green chillies - 2
  • Grated coconut - 1 cup
  • Poppy seeds - 1 tsp


Method 

Dry roast the cinnamon stick, green cardamoms, cloves, peppercorns, star anise, fennel seeds, cumin seeds, fenugreek seeds, nutmeg powder and ginger powder. Put it into a grinder and make fine powder. Keep aside.

Put a pan on the flame. Heat 1 tsp oil. Add half of the finely chopped onions and green chillies. Sauté till it turns to light brown. Add grated coconut & poppy seeds. Fry for 2 mins. Take it out and make it cool. Put it into a grinder. Add a little water and make a fine smooth paste.

Put a pan / wok on the gas. Heat 2 tsp oil. Add star anise. After a min add onions and fry till golden brown. Add the chicken pieces and fry until the chicken pcs changes its color. Add salt, turmeric powder, red chilli powder and coriander powder. Mix well. Cook in low flame for 3 to 4 mins. Add the grinded powder. Mix well. Cover the lid. Cook for another few mins. Add the grinded coconut paste and little water (warm). Mix well. Cook it with covered lid in medium flame until the chicken are almost done. In between stir well. Add garam masala powder, tamarind pulp & thick coconut milk. Mix and cook for another few mins. Serve hot with some rice dishes.
