Green Jackfruit / echor is very famous among Bangalis. Vegetarians often use this as the substitute of meat due to its texture.This is a seasonal fruit, available in summer. It is a rich source of vitamin, minerals, phytonutrients, carbohydrate, electrolytes, fiber, fat and protein. This fruit also contains calorie but no cholesterol or saturated fats. Echor Chingri is one of the most popular Bengali item which I have already shared (https://trishasskitchen.blogspot.in/2018/03/ichor-chingri-jackfruit-curry-with.html). Apart from this, echor kofta curry, echorer dalna, doi echor etc are also very famous recipes. Here I am trying a new and some different recipe with green jackfruit/ echor, i.e. Echor Pakoda.
Ingredients
- Green Jackfruit (echor), cubed - 2 cups, boiled
- Egg white - 1
- Green chillies, chopped - 2
- Ginger paste - 1/2 tsp
- Corn flour - 2 tsp
- All purpose flour - 2 tsp
- Baking soda - a pinch
- Poppy seeds - 1/2 tsp
- Red chilli powder - 1 tsp
- Soya sauce - 1/2 tsp
- Vinegar - 1 tsp
- Salt - to taste
- Sugar - to taste
- Oil - for deep fry
Method
Take the boiled echor in a mixing bowl. Add ginger paste, vinegar, soya sauce and red chilli powder. Add some salt and sugar. Mix well. Keep for at least 1 hr.
Now add baking soda, egg white, corn flour, all purpose flour, egg white, green chillies and poppy seeds. Mix well.
In a pan, heat oil for deep fry. Make sure that the oil is hot enough. Add 2 tsp hot oil to the mixture. Now put the marinated echor to the oil. Fry each sides till golden brown. Put it out on a kitchen towel. Enjoy with tomato ketchup / kasundi (mustard sauce).
