Ingredients
- Nutrela soya chunks, boiled - 1 cup
- Carrots, cut into pcs - 1 large size
- Capsicum, cut into pcs - 1/2 cup
- Lady finger (bhindi),cut into pcs - 6 to 7
- Potatoes, cut into pcs - 1 large size
- Ridge gourd (jhinge), cut into pcs - 2 small size
- Beans, cut into pcs - 1/2 cup
- Five spice blend (panch foron) - 1/3 tsp
- Tomatoes, chopped - 1 medium size
- Green chillies - 2 to 3
- Turmeric powder - 1/2 tsp
- Cumin powder - 1 tsp
- Coriander powder - 1 tsp
- Pepper powder - 1/2 tsp
- Salt - to taste
- Sugar - to taste
- Oil - as required
**you can add more vegetables as per choice
Method
Heat oil in pan/ wok. Add bhindi and a little turmeric powder. Fry and take it out. Add panch foron. When it starts to crackle, add carrots, potatoes & beans one by one. Fry for 5 mins. Add tomatoes, green chillies, ridge gourd and capsicum. Fry for another 2mins. Add soya chunks and the fried bhindi. After a few mins add salt, turmeric powder, sugar, cumin & coriander powder and pepper powder. Add some warm water. Cover the lid and cook till masala becomes dry. Add some more warm water. Cover the lid. Let it boil till the vegetables are fully cooked. Serve hot with rice.
