Khichdi is a very simple, easy, tasty and more importantly healthy dish which is mainly prepared from lentils and rice. Here I use moosur dal and regular rice. You can make it along with vegetables of your choice. This is a baby food also. Khichdi is a perfect combination of carbohydrates and protein, that is easy to digest. Moreover, it tastes really awesome and nothing can beat this food in monsoon or a rainy day.
Ingredients
- Rice, soaked in water - 1 cup
- Masoor Dal, washed - 1 cup
- Onion, chopped - 2 medium size
- Ginger, grated - 1 tsp
- Tomatoes, chopped - 1
- Green chillies - 2
- Dry red chilli - 2
- Cumin seeds - 1/3 tsp
- Bay leaf - 1
- Turmeric powder - 1/2 tsp
- Coriander powder - 1 tsp
- Garam masala powder - 1 tsp
- Red chilli powder - 1/2 tsp
- Salt - to taste
- Sugar - to taste
- Ghee - 2 tsp
- Oil - as required
Method
Take enough water in a large pan. When it starts to boil, add rice and masoor dal. Add salt and green chillies. Let it be cooked. After 5mins, add turmeric powder, tomatoes and 1/3 of the chopped onion. Give it a nice stir. Cook it till the rice and dal are completely done. In between stir well.
In a pan heat 1 tsp oil. Add cumin seeds, dry red chillies and bay leaf. After a min, add onion. Fry till golden brown. Add grated ginger and fry. Add coriander powder, red chilli powder, garam masala powder add sugar. Add a little water and cook for some time. Now pour it into the khichdi.
Add 1 tsp ghee and some warm water. Stir well. Cook for another few mins. Keep the consistency of the khichdi as per your choice. Serve hot with some papad or other bhajis.
