CHANAR DALNA


Chanar Dalna is another mouth-watering recipe from Bengali cuisine. It is a healthy and tasty recipe. Chana is a high protein food, also full of other nutrients like energy, moisture, fat, carbohydrates, fibre, calcium, Iron and Phosphorus. One can use it as a substitute of meat for vegetarian.

Ingredients
  • Chana - 1 cup
  • Potatoes, cube pcs - 1 large size
  • Tomato paste - 2 tsp
  • Corn flour - 1 tsp
  • All purpose flour - 1 and 1/2 tsp
  • Ginger paste - 1 tsp
  • Green chilli paste - 1 tsp
  • Bay leaf - 1
  • Cumin seeds - 1/3 tsp
  • Turmeric powder - 1/2 tsp
  • Kashmiri red chilli powder - 1 tsp
  • Cumin & coriander powder - 1 tsp
  • Garam masala powder - 1 tsp
  • Ghee - 1 tsp
  • Salt - to taste
  • Sugar - to taste
  • Oil - as required

Method

In a mixing bowl add chana, corn flour, all purpose flour, ginger paste, green chilli paste, salt and sugar. Mix well and make a soft dough. Take small amount from the the dough and give it a shape of balls. Make balls like these.

Put a pan on the flame. Heat oil for deep fry. Make sure that the oil is hot enough. Add the balls one by one and fry till golden brown. Fry every sides of the balls. Put it out and keep aside.

In an another pan, heat 2 tsp oil. Add cumin seeds and bay leaf. It starts to crackle within a sec. Add potatoes and some turmeric powder. Fry for a few minS. Add ginger and green chilli paste. Fry for another min. Add tomato paste and salt. Cook for 3 to 4 mins. Add kashmiri red chilli powder, cumin & coriander powder and garam masala powder. Add some water (warm). Cook till the masala leaves oil. Add the some more water and bring it to boil. When the potatoes are fully cooked and the gravy becomes nice, add the fried chana balls and 1 tsp of ghee. Bring it to boil in high flame for a min or two. Serve hot with rice / roti.
