Masala-e-egg is another egg recipe which is quite different from other recipes. A delicacy from Trisha'ss with dumpling cooked with Indian masala. This is a recipe containing lots of vegetables along with egg. As we all know, eggs are a very good source of inexpensive, high quality protein. And vegetables have uncountable health benefits. Vegetables are important sources of many nutrients, including potassium, dietary fiber, folate (folic acid), vitamin A, and vitamin C. Diets rich in potassium may help to maintain healthy blood pressure. Its rich nutrient value shields the body from numerous diseases and infections. Masala-e-egg is a perfect combination of taste and veggies. So, let's get started.
Ingredients
- Egg, boiled - 4
- Matar dal (dried peas,lentils), soaked in water - 1/2 cup
- Baking powder - a pinch
- Potatoes, cubed - 1 medium size
- Pointed gourd, cut into pcs - 4
- Carrots, cubed - 1 small size
- Capsicum, cubed - 1/2 cup
- Onion, chopped - 2 large size
- Ginger garlic paste - 1 tsp
- Tomatoes, chopped - 1 medium size
- Green chillies, chopped - 5
- Fresh coriander leaves, chopped - 1/2 cup
- Turmeric powder - 1 tsp
- Coriander powder - 1 tsp
- Cumin powder - 1 tsp
- Kashmiri red chilli powder - 1 tsp
- Garam masala powder - 1/2 tsp
- Nutmeg-mace powder - 1/2 tsp
- Lemon juice - 2 tsp
- Honey - 2 tsp
- Salt - to taste
- Sugar - to taste
- Oil - as required
Method
Take a blender. Add matar dal and 2 green chillies. Blend to make a fine paste. Put it out in a mixing bowl. Add salt, sugar, turmeric powder and a little baking powder. Mix well.
In a pan, heat oil for deep fry. Add small amount of the mixture in a shape of ball. Add more. Fry till golden brown. Turn it and fry. Put it out and keep aside. Make such dumplings from the mixture. Now fry the vegetables except capsicum one by one (pointed gourd, carrots, potatoes) and keep aside.
In 2tsp oil, add cumin seeds. It starts to crackle within a sec. Add ginger garlic paste. It will leave a nice aroma. Add chopped onion and fry till golden brown. Add chopped tomatoes, green chillies and salt. Fry till the tomatoes are fully cooked. Add some warm water to it. Then add turmeric powder, Kashmiri red chilli powder, cumin & coriander powder, nutmeg -mace powder and garam masala powder. Give it a nice mix. Add capsicum. Cook it for 3 to 4 mins.
Now add a little more warm water and the fried vegetables. Cook till it leaves oil. Add some more water (warm). Cover the lid. Cook till the vegetables are nice and soft. Add the fresh coriander leaves, lemon juice and the fried dumplings. Smash one boiled egg and add it to the gravy. Add honey. Stir well. Add the boiled eggs. When the gravy becomes dry, garnish with some fresh coriander leaves and serve hot with naan / rice.
