CHICHINGA-CHINGRIR JUGOLBONDI | SNAKE GOURD FRY WITH PRAWNS



Snake Gourd Fry or Chichinga Posto - an another traditional Bengali recipe. It is so tasty as well as healthy. Even you can serve this dish on any ocassion. Snake gourd has a super health benifit. Many of various diseases cured by Snake Gourd. It helps in detoxification of the body, improve digestion, increase hydration, strengthen the immune system, treat diabetes and reduce fever. It is considered as a very good food to improve the quality of hair, and also helps in weight loss. So, add this vegetable to your regular food menu. Here is a recipe for a mouthwatering Bengali dish -


Ingredients
  • Snake gourd, peeled and thinly sliced - 4 large size
  • Black cumin seeds - 1/3 tsp
  • Dry red chilli - 2
  • Coconut, grated - 1/2 cup
  • Prawns, fried - 10 to 12 small size
  • Poppy seeds paste - 3 tsp
  • Green chillies - 2
  • Turmeric powder - 1/2 tsp
  • Sugar - to taste
  • Salt - to taste
  • Mustard oil - as required

Method

In a pan, add some water and salt. Bring it to boil. Switch off the flame. Add the chichinga/ snake gourd. Soak it for 2 to 3 mins and then drain water.


Heat oil in pan. Add black cumin seeds and dry red chillies. When it crackles, add the chichinga. Add green chillies, turmeric powder, salt and sugar. Fry it in medium flame. It may leave water. When it becomes dry, add coconuts and fried prawns. Fry it with covered lid till  coconut turn to light brown.


Now add the poppy seeds paste. Give it a nice mix. Cook it for another few mins. Serve hot with rice.
