AMRITSARI CHOLE-RAJMA MASALA

  

This recipe, Amritsari Chole-Rajma is so tasty as well as healthy. Chickpeas, yellow peas, rajma, soyabeans are full of nutritions. Chickpeas are a great source of plant-based protein and fiber, iron, zinc, phosphorus, folate, B vitamins and more. Yellow peas are very low in Saturated Fat, Cholesterol and Sodium. These are also an excellent source of molybdenum. They are also a very good source of dietary fiber and a good source of vitamin B1 & B5, phosphorus, manganese, copper, protein and potassium. The kidney bean is a variety of the common bean. They are high in calcium and potassium, which are important for bone strength. They also contain protein. Soybean nutrition has the highest protein content of all the leguminous plants. They are a very good source of manganese, phosphorus, and protein as well as a good source of iron, omega-3 fatty acids, dietary fiber, vitamin B2, magnesium, vitamin K and potassium. So, lets get the recipe of such a healthy dish.


Ingredients
  • Dried yellow peas, soaked in water overnight and drained - 1/2 cup
  • Raw chickpeas, soaked in water overnight and drained - 1/2 cup
  • Rajma (Kidney beans), soaked in water overnight and drained - 1/2 cup
  • Dried black chickpeas, soaked in water overnight and drained - 1/2 cup
  • Soya beans seeds, soaked in water overnight and drained - 1/3 cup
  • Potatoes in small cubed, fried - 1 large size
  • Eggs - 3
  • Tomato puree - 1 cup
  • Tea bag - 1
  • Cardamom - 2
  • Cloves - 2
  • Peppercorns - 3 to 4
  • Cinnamon stick - 1 inch
  • Bay leaf - 1
  • Dry red chilli - 2
  • Green chillies - 3
  • Onion, chopped - 2 medium size
  • Ginger-garlic paste - 1 tsp
  • Roasted cumin - coriander powder - 1 and 1/2 tsp
  • Turmeric powder - 1 tsp
  • Kashmiri red chilli powder - 1 tsp
  • Garam masala powder - 1 tsp
  • Chaat masala powder - 1/2 tsp
  • Fresh coriander leaves, chopped - 2 tsp
  • Lemon juice - 1 tsp
  • Salt - to taste
  • Sugar - to taste
  • Oil - as required
  • Butter - as per choice

Method

Put the soaked yellow peas, black chickpeas, raw chickpeas, rajma and soybean seeds in a pressure cooker. Add some water, the tea bag, cloves, cardamom, cinnamon stick, peppercorns, salt and a pinch of turmeric. Close the lid and cook it to 4 to 5 whistles. Keep it for 10mins. Remove the lid.

Heat 2 tsp oil in a pan. Beat the eggs and pour it into the pan. Add some salt and fry it. Put this scrambled eggs out and keep aside. 

Heat 2 tsp butter in the pan. Add bay leaf, dry red chilli and cumin seeds. It starts to crackle within a min. Add the chopped onions and fry till golden brown. Add ginger - garlic paste and fry for another few mins. Add the tomato puree and green chillies. Add salt and sugar. Mix well, cook for 2 to 3 mins. Add turmeric powder, roasted cumin & coriander powder, kashmiri red chilli powder and garam masala powder. Add some warm water. Cook for a few mins. Add the fried potatoes and boiled chole, rajma, chickpeas and soybeans. Mix well. Cook till the masala leaves oil. Add some more water, cover the lid. Cook in medium high flame.

Add the scrambled eggs and chaat masala powder. Give it a nice stir. When the gravy becomes nice and thick, add the chopped coriander leaves. Garnish with some lemon juice and onions and serve hot with rotis or parathas.
