Today I am going to share a simple recipe, i.e. Aloo -Gobi Curry. A very easy yet tasty dish. Cauliflower is a good source of antioxidents; contains vitamin C, which helps with collagen production, and vitamin K, which may help prevent bone loss. It keeps your eyes in good shape, maintains hormonal balance, help you to lose weight. There are so many reasons to have it in your meal. It is easy to make and can have along with rice or roti. Let's check out the recipe -
Ingredients
- Cauliflower, cut into pcs - 1
- Potatoes, cube pcs - 1 large size
- Green chilli, slit - 3
- Ginger, grated - 1 tsp
- Tomatoes, chopped - 1 medium size
- Tomato ketchup - 1 tsp
- Turmeric powder - 1 tsp
- Kashmiri red chilli powder - 1 tsp
- Cumin powder - 1 tsp
- Coriander powder - 1 tsp
- Garam masala powder - 1 tsp
- Ghee - 1 tsp
- Salt - to taste
- Sugar - to taste
- Oil - as required
Method
Heat 2 tsp oil in a pan or wok. Add the cauliflower and sprinkle some salt and turmeric powder. Fry and take it out and keep aside. Add the potatoes and fry. Take it out and keep aside.
In the remaining oil (add a tsp of oil if needed), add the grated ginger. Fry for a min. Add the chopped tomatoes, green chillies and some salt. Cook till nice and soft. Add turmeric powder, a little salt, sugar, tomato ketchup, kashmiri red chilli powder, cumin - coriander powder and some warm water. Cook it. After a few mins, add the fried potatoes and cauliflower. Mix well. Cook till the masala releases oil. Add some more water. Cover the lid and bring it to boil. When the vegetables are cooked, add ghee and garam masala powder. I am adding this ghee and garam masala powder at this time because I want the strong flavour of these into the gravy. If you don't like the strong essence, add it along with the masala and cook. When the gravy becomes thick, garnish with some fresh coriander leaves and serve.
