Beetroot is rich in vitamins, minerals and nutrients. Beets also contain nitrates and pigments that may help lower blood pressure. It is not only healthy but tasty too. This is one of my most favourite veggie of winter. Carrots have a number of health benefits. They are a weight loss friendly food and have been linked to lower cholesterol levels. It is best known for their rich supply of the antioxidant nutrient - beta-carotene. The bright red and orange colors of beetroot & carrots are very attractive. You can make lots of different dishes using this. Here I am sharing one of these, i.e. Beetroot - Carrot Fry.
Ingredients
- Beetroot, sliced - 2
- Carrots, sliced - 1
- Potatoes, sliced in finger shape - 1 large size
- Onion, thinly sliced - 1 large size
- Ginger, grated - 1/2 tsp
- Green chilli, slit - 1
- Dry red chilli - 1
- Turmeric powder - 1/3 tsp
- Dry mango powder - 1/2 tsp
- Salt - to taste
- Sugar - to taste
- Mustard oil - as required
Method
Soak all the vegetables in 5 mins and then drain the water. Put a pan on the flame. Heat oil. Add the dry red chilli. Now add the sliced onion, ginger and green chilli. Saute for a few sec. Add the beetroot, carrots and potatoes. Add some turmeric powder and salt. Give it a nice mix. Cover the lid and fry it in medium flame. In between stir well. Add some sugar and dry mango powder. Mix well. When the vegetables are nice and soft, put the flame in high and fry for another few mins. Serve hot.
