BENGALI STYLE MUTTON KASHA


Mutton is not only a food but an emotion for any food lover. Specially among Bengalis, Sunday means Mangsho-bhat. We can't even think Sunday or any holiday without mangsho. The most important part of mutton recipe that it should be nice and soft. The juicy mutton melting in mouth gives an extraorinary feelings. You can cook it in pressure cooker but I always prefer to cook it in kadai, though it takes time.Today I am going to share a delicious recipe - Bengali Style Mutton Kasha, along with potatoes. So, lets check out the recipe -


Ingredients
  • Mutton, on bone - 1.5 kg
  • Baby potatoes, peeled - 6 to 8
  • Curd - 1 cup
  • Onion juice - 1 cup
  • Ginger, grated - 1 and 1/2 tsp
  • Garlic paste - 2 tsp
  • Tomato puree - 1/2 cup
  • Green chilli paste - 1 and 1/2 tsp
  • Fresh coriander leaves, chopped - 1/2 cup
  • Bay leaf - 2
  • Black cardamom - 2
  • Green cardamom - 4
  • Cinnamon stick - 1 inch long
  • Pepper powder - 1 tsp
  • Turmeric powder - 1/2 tsp
  • Kashmiri red chilli powder - 1 tsp
  • Cumin-coriander powder - 1 tsp
  • Garam masala powder - 1 tsp
  • Salt - to taste
  • Sugar - to taste
  • Mustard oil - as required

Method

Take a mixing bowl, add the mutton and curd. Add some pepper powder. Give it a nice mix and keep the marinated mutton for at least 3 to 4 hrs or overnight at refrigerator.

In a bowl, add the cumin-coriander powder, turmeric powder and kashmiri red chilli powder. Add some warm water and make a paste. Keep aside.


Take the baby potatoes, sprinkle some turmeric powder and salt. Now, heat a heavy bottom kadai. Add mustard oil. When the oil is hot enough, add the baby potatoes and fry till golden brown. Take it out and keep aside. 


In the remaining oil, add the whole spices (green & black cardamom, cinnamon stick) and bay leaf. It will leave a nice aroma within a few sec. Now add the garlic paste and grated ginger. Fry till the raw smell goes away. Now add the green chilli paste and onion juice. Cook it for a few min and then add the tomato puree. Add a little salt and sugar. Cook for another few mins. Now add the premade masala paste to it and cook till the masala leaves oil. Add the marinated mutton. Mix well. Cover the lid and cook in medium low flame for 1 hr. In between add some warm water if needed and stir well. 
Add the fried potatoes, garam masala powder & coriander leaves and cook till the mutton and potatoes become nice and soft. Add the rest of the chopped coriander leaves and serve hot with steamed rice.
