GAJAR KA HALWA | GAJAR BARFI


Kuch meetha ho jaye! Desserts are always welcomed, specially when its Gajar Ka Halwa! Yumm! No one can resist to have this. It is originated from Punjab. When you asked for a sweet dish, Gajar Ka Halwa is one of the most preferable dish. All you need to make perfect Gajar Halwa is patience. Don't make it in hurry. It takes time but it is a very simple and easy recipe. Lets get through it - 




Ingredients
  • Carrots, peeled and grated - 1 kg
  • Condensed milk - 200 gm
  • Green cardamoms, crushed - 8
  • Ghee - 7 to 8 tsp
  • Sugar - 7 to 8 tsp
  • Raisins - 2 tsp
  • Almonds, shredded - 1 tsp
  • Dates, chopped - 2 tsp
**Note - you can add any dry fruits according to your choice


Method

Take a heavy bottom pan or kadai to make the halwa. Heat 2 tsp ghee. Add the half of the crushed green cardamom. After a few secs, add the grated carrots. Fry in medium low heat for 30 mins with covered lids. In between add 4 tsp ghee and stir well. 

When the carrots get nice and cooked, add the sugar. Mix well. Add the condensed milk. Give it a nice mix. Cook till it becomes dry. Add the ghee and raisins, almond and dates. Cover the lid and cook for another few mins. Gajar ka halwa ready to serve. 

If you want to make barfi, then grease a flat dish with some ghee. Put the mixture into it. spread it. put it into the refrigerator for an hour. Take it out and cut it into shapes using a knife and serve.
