PALAK PARATHA



Green leafy vegetables are always welcomed in our daily meal. Spinch or palak are important for skin, hair, and bone health. It also reduce oxidative stress and reduce blood pressure levels among other health functions. It is rich in vitamins and minerals, such as potassium, magnesium, and vitamins B6, B9 and E. So, its very important to add palak in our daily meals. Even we can make delicious dishes using spinach like palak paneer, palak rice, palak paratha, palak chicken and so many. And always try to use fresh green palak leaf. I have already shared the recipe of Palak Chicken (https://trishasskitchen.blogspot.com/2018/01/palak-chicken.html) in my blog. Today I am going to share another palak recipe, i.e. Palak Paratha.

Ingredients
  • Palak, chopped - 4 cups
  • Fresh coriander leaves - 1 cup
  • Ginger, grated - 1 tsp
  • Green chilli - 1
  • Ajwain - 1/2 tsp
  • Amchur powder - 1/2 tsp
  • All purpose flour - 1 cup
  • Wheat flour - 2 cups
  • Baking powder - 1/4 tsp
  • Sugar - as required
  • Salt - as required
  • Oil - as required
  • Ghee or butter - as required

Method

Whenever we use a large quantity of palak or spinach, it is always recommended to blanch the spinach before making the dish. It is healthy as well as gives a nice green color.


Boil some water in a pan. Add 1/2 tsp salt. Now add the spinach or palak leaves into it. Let it leaves sit in the water for 2 mins. Drain the water and take the palak leaves into ice water. It helps in preserving the green color of the palak (in a bowl of water, add 10 cubes of ice). Do this method immediately.


In a blender or grinder jar, add the palak, coriander leaves, ajwain, ginger and green chilli. No need to add water. Make a fine smooth puree. Keep aside.


Take the wheat flour and all purpose flour in a mixing bowl. Add baking powder, amchur powder, some salt, sugar and 1 tsp oil. Give it a nice mix. Add the palak puree to it. Add warm water and make a soft dough. Add 1 tsp oil and keep it for at least 30 mins with a damp kitchen towel.




After 30 mins, divide the dough into small equal size balls. Sprinkle some flour on the rolling board, take one ball and roll with a rolling-pin. Heat a tawa and place the paratha onto it. Roast one side. Turn the paratha and grease with oil/ butter/ghee as per your choice. Grease both sides of the paratha and serve hot with some chatpata pickles.
