Love will find it's own way! In winter, for me, love is palak or spinach. I wish to have it almost everyday in this season. So, I always try to make some new dishes along with spinach. There are lots of fresh seasonal vegetables available in the market this time. We all know the benefits of having spinach. Palak paneer is everyone's favourite. Another popular recipes in my house are palong shak (palak saag), moong-palak, palak sabji, palak chicken and many others. Today I am going to share the recipe of Palak Sabji.
- Spinach or palak, roughly chopped - 2 cups
- Potatoes, cut into small cubes - 1 large size
- Carrots, cut into small cubes - 1
- Cauliflower, cut into small pcs - 1/2 cup
- Green peas - 1/3 cup
- Onion, chopped - 1 medium size
- Ginger- garlic paste - 1 tsp
- Tomato puree - 2 to 3 tsp
- Green chilli, slit - 2
- Turmeric powder - 1/2 tsp
- Cumin- coriander powder - 1 tsp
- Garam masala powder - 1/2 tsp
- Chat masala powder - 1/3 tsp
- Salt - to taste
- Sugar - to taste
- Oil - as required
Method
Heat 1 tsp oil in a pan. Add the potatoes, carrots, cauliflower and green peas. Sprinkle some turmeric powder & salt and fry. Take it out and keep aside.
Add 1 tsp oil. Add the ginger- garlic paste, fry it for a few sec. Add the chopped onion. Fry till tansculent. Add the green chillies and tomato puree. Cook for another few mins.
Now add the turmeric powder, salt, sugar, cumin - coriander powder, chat masala powder and garam masala powder. Add the fried vegetables and some warm water. Cook till the masala leaves oil.
Add the palak or spinach. Add some more water (warm). Cook till becomes dry. Healthy n tasty Palak Sabji is ready to serve.
