MASALEDAR ALOO



Potato is the most common vegetable available in our kitchen. There are in-numerous recipes of potatoes like Dum Aloo, Aloo Palak, Jeera Aloo, Kashmiri Dum Aloo, Aloo Dum Benarasi, Lahori Aloo and so many. Today I am going to share a very tasty recipe, i.e. Masaledar Aloo - a total vegeterian recipe, no onion- no garlic. Again its a very easy recipe. When you are in hurry but need to impress your guest serve this aloo dish along with roti/ paratha / rice. Let's get the recipe -


Ingredients
  • Potatoes, boiled & peeled - 500 gm (cut into small cube pcs)
  • Bay leaf - 1
  • Whole spices - Cardamom, cinnamon, cloves
  • Ginger, grated - 1 inch
  • Tomato, finely chopped - 1 large size
  • Green chillies, slit - 2 to 3
  • Yogurt - 1/2 cup
  • Turmeric powder - 1/2 tsp
  • Kashmiri red chilli powder - 1 tsp
  • Coriander powder - 1 tsp
  • Fresh coriander leaves, chopped - - 2 tsp
  • Kasuri methi - 1 tsp
  • Salt - to taste
  • Sugar - to taste
  • Mustard oil - as rquired
  • Ghee - 2 tsp

Method

Take the boiled potatoes in a bowl and prick with a fork on all sides. Sprinkle some turmeric powder and salt.

Heat oil in a wok. Add the potatoes and fry it till golden brown. Remove and keep aside.


Keep 2 tsp oil in the same wok and remove the excess oil. Add 1 tsp ghee. Add bay leaf and whole spices. It will leave a nice aroma within a few sec. Add grated ginger and green chillies. Saute for a few secs. Add chopped tomatoes and some salt & sugar. Cover the lid and cook till nice and soft. Add turmeric powder, kashmiri red chilli powder and coriander powder. Mix well.


Whisk the yogurt and add it to the masala. Give it a nice stir. Add a little water (warm) and cook till the masala releases oil. Now add the fried potatoes and half of the coriander leaves. Add some more water. Cover the lid. Bring it to boil. Add the kasuri methi and ghee. Mix well. Cook till the gravy becomes nice and thick. Garnish with some fresh chopped coriander leaves and serve.
