Vegetables are always welcome! Specially in winter the colorful fresh vegetables just make me crazy to buy these and cook different dishes. All the vegetables like carrots, cabbages, radish, beans, pumpkins, flat beans, papaya etc have its own nutritional values. These are rich in vitamins. It is healthy to have veggies. But you have to make it tasty too, so that everyone in your family enjoy the dish and wish to have it repeated times. Today's recipe is Veg Maharani. It is a very simple and easy recipe. Ingredients
- Potato – 1
- Sweet potato - 1 medium size
- Carrots – 2
- Green papaya - 150 gms
- Radish – 1
- Cabbage, chopped – 1 cup
- Beans, chopped – 1 cup
- Pumpkin, cut into pieces – 1 cup
- Flat beans or sheem - 8
- Prawn, medium size - 10 to 12
- Five spice (Panch foron) - 1/3 tsp
- Poppy seeds, soaked in water - 4 tsp
- Cashew nuts - 8
- Almonds - 4
- Turmeric powder - 1 tsp
- Tomato, chopped - 1
- Green chilli - 3
- Salt - to taste
- Sugar - To taste
- Mustard oil - as required
Method
Take a blender and put the poppy seeds into it. Add tomatoes, green chillies, cashew nuts and almonds. Add a little water and make a fine smooth paste. keep aside.
Marinate the prawns with some turmeric powder and salt. Put a pan on the flame. Heat 2 tsp oil. Add the prawns and fry for a min. Don't fry till too crisp. Keep aside.
In the remaining oil, add the five spice. Once it starts to crackle, add the vegetables one by one. Add some salt and turmeric powder. Fry till the vegetables are nice and almost cooked. In between add the fried prawns. Add the poppy seeds paste and some sugar. Give it a nice mix. Cover the lid and cook in low flame for about 2 to 3 mins. Serve with rice or roti.
