GHEE RICE

Rice is something that we all love to have in our meal. I am tired of making fried rice and biryani. So, today I thought to try a different one, i.e. Ghee Rice. Very simple and easy recipe. Children love it as it is sweet in taste. You can serve it along with any North Indian side dishes. While making food for guests, this is preferable as it can be made easily. You can add dry fruits of your choices. Today I am using only a few of them. The smell of ghee is more than enough to satisfy my soul..... aaaahhhhh! Not wasting too much time, let's check out the ingredients -

Ingredients
  • Gobindobhog atop chawl (rice) - 2 glasses
  • Cinnamon stick - 1 inch
  • Green cardaomom - 2
  • Cloves - 2
  • Black peppercorn - 2
  • Bay leaf - 2
  • Garam masala powder - 1 tsp
  • Lemon juice - 1 tsp
  • Raisins - 12-14
  • Cashew nuts, chopped - 8 to 10
  • Almonds - 6 to 8
  • Salt - to taste
  • Sugar - to taste
  • Ghee - as required

Method

Wash the rice and drain the water. Let it completely dry. Add 1 tsp ghee & garam masala powder and mix well. Keep aside. Boil 3 glasses of water. The rice and water ratio is normally 1:2 , but as it is atop chawl, we will use a little less.

Heat a pan. Add 1 tsp ghee. Add bay leaf, cinnamon stick, green cardamom, cloves and black peppercorn. After a few secs, add the raisins, chopped cashews and alomnds. Fry it for another 30 secs. Add the rice and fry in medium flame for 2 mins. It will leave a nice aroma. Add the warm, boiling water. Add salt as per taste. Cover and cook. Once the rice is alomst done, add lemon juice and sugar. Sugar as per taste. This rice is basically sweet in taste. Add 1 tsp ghee and mix carefully. Serve hot.
