EGG KASHA


I think eggs are the most important ingredients of my kitchen. I always use to try different recipes of eggs. My husband is not fond of fishes, he likes to have eggs as it consumes less time to eat. And I think there is a few who doesn't like eggs. Egg has its different fan base. So, today's recipe is a lovely dish, though it is very common - Egg Kasha. If you are a beginner in this kitchen world, then you must try this one. "Aao Sikhao Tume Ande Ka Funda, Yeh Nahin Pyare Koi Maamule Banda" - haha! Jokes apart. Let's get the funda of a delicious Egg Kasha.


Ingredients - 
  • Eggs - 8
  • Onion, chopped - 1 large size
  • Onion paste - 2tsp
  • Garlic - 3 cloves
  • Ginger,chopped - 1 tsp
  • Tomatoes, finely chopped - 1 large size
  • Green chilli - 3
  • Coriander leaves - a few
  • Dry red chilli - 1
  • Cumin seeds - 1/3 tsp
  • Turmeric powder - 1 tsp
  • Cumin-coriander powder - 1 tsp
  • Kashmiri red chilli powder - 1 tsp
  • Garam masala powder - 1 tsp
  • Freshly chopped coriander leaves - for garnishing
  • Salt - to taste
  • Sugar- to taste
  • Oil - as required

Method

Take a pan. Add some water and 1/2 tsp salt. Add the eggs one by one and bring it to boil for 10-15 mins. We need hard boiled eggs. Switch off the flame and transfer the eggs into ice chilled water. It helps to peel the eggs easily. Now slit slightly the eggs from all sides.


In a blender, take the coriander leaves, garlic, ginger and green chillies. Add a little water and grind it to a fine paste. Keep aside.


Take a pan. Heat oil. Add 1/2 tsp turmeric powder, 1/3 tsp kashmiri red chilli powder and some salt. Mix well. Add the boiled eggs and fry till light golden brown. Take these out and keep aside. Add the dry red chilli and cumin seeds to the remaining oil. Once it starts to crackle, add the chopped onion and fry till golden brown. Now add the grinded paste and cook till the raw smell goes away. Now add the tomatoes and salt and sugar. Once the tomatoes are nice and soft, add the turmeric powder, kashmiri red chilli powder, cumin-coriander powder and 1/2 tsp garam masala powder. Add a little warm water and cook till the oil comes out from the masala.
